Ingredients

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 pound smoked sausage or kielbasa, sliced
4 cups chicken broth
1 (15 oz) can cannellini beans, drained and rinsed
1 (15 oz) can diced tomatoes
2 cups chopped kale or collard greens
Salt and black pepper, to taste
Red pepper flakes (optional)

Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion and sauté for 3–4 minutes until translucent.
Add garlic and cook for another 30 seconds until fragrant.
Stir in the sliced sausage and cook for 5 minutes, browning lightly.
Pour in the chicken broth, beans, and diced tomatoes.
Add chopped greens and stir to combine.
Bring the soup to a gentle boil, then reduce to simmer for 20–25 minutes.
Season with salt, pepper, and optional red pepper flakes.
Serve hot with cornbread or crusty bread.

Notes

Use spinach for a milder green or swap in turkey sausage for a leaner option. Add lemon juice at the end to brighten flavor. Freeze leftovers in portions for easy meals.
