Ingredients
10 oz Granulated Sugar
7 oz Sweetened Condensed Milk
5 oz Water
4 tsp Gelatin Powder
2.5 oz Water
7 oz White Chocolate
2 drops White Food Coloring
Instructions
1. Heat sugar and first portion of water until simmering.
2. Mix gelatin with second portion of water and let bloom for 15 minutes.
3. Combine white chocolate and condensed milk in a bowl.
4. Add bloomed gelatin to hot syrup and stir until dissolved.
5. Pour syrup over chocolate mixture, rest for 5 minutes, whisk until melted.
6. Add food coloring, strain, and cool to 90°F.
7. Pour over frozen cake and let set for 5 minutes.

Use high-quality chocolate for best texture.
