Ingredients
3 large eggs (separated, room temperature)
3 oz mascarpone (or cream cheese, softened)
1/8 tsp cream of tartar (optional)
1/8 tsp sea salt
Instructions
1. Preheat oven to 300°F (149°C). Line a baking sheet with parchment paper and lightly grease.
2. Beat egg whites and cream of tartar until stiff peaks form.
3. In another bowl, mix mascarpone, egg yolks, and salt until smooth.
4. Gently fold whites into the yolk mixture.
5. Scoop six small circles onto the baking sheet.
6. Bake 25–35 minutes until golden. Cool completely before serving.
Notes
Swap mascarpone for cream cheese for a tangy twist.
Serve with whipped cream and berries for a light dessert.
