Cookie Dough Ice Cream Sandwich: A Melty Bite of Comfort

Ingredients

150 g all-purpose flour (heat-treated)

113 g unsalted butter (room temperature)

140 g light brown sugar

1 tbsp milk

½ tsp vanilla

½ tsp salt

90 g mini chocolate chips

1 pint vanilla ice cream

85 g semi-sweet chocolate chips (for drizzle)

Instructions

1. Heat-treat the flour until it reaches 165°F.

2. Cream butter and sugar until light and fluffy.

3. Add milk and vanilla; mix well.

4. Fold in flour, salt, and chocolate chips.

5. Press half the dough into a lined pan; freeze 10 minutes.

6. Spread softened ice cream over dough; top with remaining dough.

7. Freeze at least 4 hours.

8. Melt chocolate chips and drizzle over sliced sandwiches before serving.

Notes

Use gluten-free or almond flour if preferred.

Allow sandwiches to rest 2–3 minutes before serving for best texture.

Store tightly wrapped in freezer for up to 2 weeks.
