Ingredients
Cabbage 2 cups shredded
Eggs 2 large
Garlic 2 cloves minced
Onion ½ chopped
Soy sauce 1 tbsp
Salt to taste
Black pepper to taste
Olive oil 1 tbsp
Instructions
Heat olive oil in a pan over medium heat
Add chopped onion and minced garlic sauté for 30 seconds until fragrant
Add shredded cabbage and stir-fry for 3 to 4 minutes until slightly softened
Season with soy sauce salt and black pepper mix well
Push the cabbage to one side of the pan
Pour the beaten eggs into the empty space let them sit for 20 seconds then gently scramble
Once eggs are cooked mix them with the cabbage and stir for another 1 to 2 minutes
Remove from heat and serve warm
Notes
For extra crunch soak the shredded cabbage in cold water for 5 minutes before cooking and drain well
If the cabbage releases too much water cook on high heat for a minute to evaporate excess moisture
For a spicy kick add chili flakes or hot sauce
Pair with rice bread or noodles for a more filling meal
