Ingredients

Sourdough bread thick slices 6
Eggs 3 large
Milk or heavy cream ¾ cup
Vanilla extract 1 teaspoon
Cinnamon ½ teaspoon
Sugar or honey 1 tablespoon
Salt pinch
Butter 2 tablespoons for cooking
Maple syrup fresh fruit or powdered sugar for serving

Instructions

Whisk together eggs milk vanilla extract cinnamon sugar and salt in a large bowl until fully combined
Heat a non-stick pan or griddle over medium heat and melt butter
Dip each slice of sourdough bread into the egg mixture allowing it to soak for 20 to 30 seconds per side
Place the soaked bread slices onto the pan and cook for about 3 to 4 minutes per side until golden brown and slightly crispy
Remove from heat and serve immediately with maple syrup fresh fruit or powdered sugar

Notes

Slightly stale sourdough works best as it absorbs the batter without becoming too soggy
For a richer flavor use heavy cream instead of milk in the batter
To make a dairy-free version replace milk with almond or oat milk and use coconut oil instead of butter
For extra flavor add a pinch of nutmeg or a tablespoon of orange zest to the egg mixture
If you prefer a crispier crust sprinkle a little sugar on each side before cooking
