Ingredients

For the Chicken

Boneless skinless chicken breasts 4 pieces
Salt and black pepper to taste
Olive oil 2 tablespoons
Butter 2 tablespoons

For the Toppings

Mushrooms sliced 1 cup
Bacon strips 4 to 6 slices
Shredded cheese Monterey Jack and Cheddar 1 cup

For the Honey Mustard Sauce

Honey 1/4 cup
Dijon mustard 1/4 cup
Mayonnaise 1/4 cup
Lemon juice 1 tablespoon


Instructions

Prepare the Honey Mustard Sauce

In a small bowl mix honey Dijon mustard mayonnaise and lemon juice until well combined
Set aside half of the sauce for serving and use the other half for marinating the chicken

Marinate the Chicken

Pound the chicken breasts to an even thickness of about half an inch
Season both sides with salt and black pepper
Place the chicken in a bowl or zip-lock bag and coat with half of the honey mustard sauce
Marinate for at least 30 minutes or up to 2 hours for better flavor

Cook the Bacon and Mushrooms

Cook the bacon in a skillet over medium heat until crispy then place on paper towels to drain
In the same skillet add butter and sliced mushrooms then cook until soft and slightly browned about five minutes

Grill or Pan-Fry the Chicken

Heat olive oil in a large skillet over medium-high heat
Remove the chicken from the marinade and cook for four to five minutes per side until golden brown

Assemble and Bake

Preheat the oven to 375°F or 190°C
Place the cooked chicken on a baking sheet or oven-safe dish
Top each piece with cooked bacon strips and sautéed mushrooms
Sprinkle shredded cheese over the top
Bake for 10 to 12 minutes or until the cheese is fully melted

Serve and Enjoy

Remove the chicken from the oven and let it rest for a couple of minutes
Drizzle the remaining honey mustard sauce over the top
Serve hot with your favorite side dishes

Notes

For extra juiciness let the chicken marinate overnight in the refrigerator
