Ingredients
6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white truffle oil
Salt and freshly ground black pepper to taste
Chives finely chopped for garnish
Paprika for garnish (optional)
Instructions
Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil over medium heat.
Once boiling, cover the pan, remove from heat, and let sit for 10 minutes.
Transfer the eggs to an ice bath and cool completely.
Peel the eggs and slice them in half lengthwise.
Carefully remove the yolks and place them in a mixing bowl.
Mash the yolks with a fork until crumbly.
Add mayonnaise, Dijon mustard, and white truffle oil to the yolks and mix until smooth.
Season the mixture with salt and pepper to taste.
Pipe or spoon the yolk mixture back into the egg whites.
Garnish with chopped chives and a sprinkle of paprika if desired.
Notes
For best flavor, use high-quality white truffle oil. You can substitute black truffle oil for a bolder taste. Prepare eggs a day ahead and assemble them right before serving to keep them fresh.
