2 cups beef tripe cleaned and cut into small pieces
4 cups beef broth
2 potatoes diced
1 onion chopped
1 green bell pepper chopped
2 carrots diced
2 cloves garlic minced
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon thyme
1 teaspoon paprika
1 bay leaf
1 tablespoon butter
1 tablespoon flour
1 cup heavy cream


Instructions

Melt butter in a large pot over medium heat and add flour stirring continuously to create a roux
Add chopped onions garlic bell pepper and carrots cooking until softened
Pour in the beef broth and add tripe potatoes thyme black pepper salt paprika and bay leaf
Bring to a boil then reduce heat and let simmer for 1 hour until the tripe is tender
Stir in heavy cream remove bay leaf and adjust seasoning to taste
Serve hot and enjoy a taste of nostalgia

Notes

For an authentic touch let the soup sit for a few hours before reheating to enhance the flavors
Substitute tripe with beef or chicken if preferred
