Ingredients
6 small flour tortillas
1 cup cottage cheese
6 large eggs
1/2 cup milk
1/2 cup shredded cheddar cheese
1/2 cup diced bell pepper
1/4 cup chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Butter or oil for greasing
Instructions
Preheat oven to 375°F (190°C).
Grease an 8×8 or 9×9-inch baking dish with butter or oil.
Layer tortillas across the bottom of the dish, overlapping to form a crust.
In a large bowl, whisk together eggs, milk, cottage cheese, garlic powder, salt, and black pepper.
Add diced bell pepper and chopped green onions into the egg mixture.
Pour the egg mixture evenly over the tortilla base in the baking dish.
Sprinkle shredded cheddar cheese on top.
Bake uncovered for 30 to 35 minutes, or until the center is set and the top is golden.
Let cool for 5 minutes before slicing and serving.
Notes
Use full-fat cottage cheese for extra creaminess. Swap cheddar with pepper jack or mozzarella for different flavor profiles. You can use corn tortillas for a gluten-free version.
