Ingredients

6 large eggs
1 cup milk or heavy cream
3 to 4 medium flour tortillas
1 and a half cups shredded cheese cheddar mozzarella or a mix
Half cup cooked bacon or sausage optional
1 cup chopped vegetables bell peppers onions spinach mushrooms
Salt and black pepper to taste
Half teaspoon garlic powder or onion powder
Butter or cooking spray for greasing


Instructions

Preheat the oven to 375°F or 190°C and grease a round or square baking dish
Layer the tortillas in the dish slightly overlapping them to form a crust press them down so they stay in place
In a mixing bowl whisk together eggs milk salt pepper and seasonings until smooth
Sprinkle half of the cheese over the tortilla crust then add the cooked bacon sausage or preferred protein and distribute the chopped vegetables evenly
Carefully pour the egg mixture over the fillings ensuring it spreads evenly then top with the remaining cheese
Bake for 30 to 35 minutes or until the eggs are set and the top is golden brown
Let it cool for 5 minutes before slicing then garnish with fresh herbs or avocado slices and serve warm

Notes

For a gluten-free option use corn tortillas instead of flour tortillas
For a dairy-free version replace the cheese with a dairy-free alternative and use almond or oat milk
To prevent a soggy crust lightly toast the tortillas in a pan before layering them
