Ingredients
Turkey necks 2 lbs
Onion chopped 1 large
Garlic minced 4 cloves
Bell pepper chopped 1 medium
Celery chopped 2 stalks
Chicken or turkey broth 4 cups
Salt 1 tsp
Black pepper ½ tsp
Smoked paprika ½ tsp
Thyme ½ tsp
Cayenne pepper ¼ tsp optional
Vegetable oil 2 tbsp
Instructions
Rinse the turkey necks under cold water and pat them dry. Season the meat by rubbing turkey necks with salt, black pepper, smoked paprika, thyme, and cayenne pepper. Heat vegetable oil in a large pot over medium heat and brown the turkey necks for three minutes per side. Add onions, garlic, bell peppers, and celery and cook until fragrant. Pour in the chicken or turkey broth and bring to a boil. Reduce heat, cover, and cook for two to three hours until the meat is tender. Serve with rice, cornbread, or mashed potatoes for a hearty meal.
Notes
For extra flavor marinate turkey necks overnight in seasonings before cooking. For faster cooking use an Instant Pot and pressure cook for 45 minutes on high. To make a thick gravy mix one tablespoon of cornstarch with two tablespoons of water and stir into the broth before serving.
