Ingredients
1 pound lean ground beef (85% lean)
6 to 8 medium flour tortillas
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1 ½ cups salsa (mild, medium, or hot)
1 packet taco seasoning mix or 2 tablespoons homemade taco seasoning
1 can black beans (15 oz, drained and rinsed)
1 cup corn (optional)
½ cup chopped green onions (optional)

Instructions
Preheat your oven to 375°F (190°C)
In a large mixing bowl combine raw ground beef with taco seasoning and half of the salsa mix well until evenly coated
Stir in black beans and corn until fully combined
Spread a thin layer of salsa on the bottom of a 9×13-inch baking dish to prevent sticking
Place two tortillas in the dish slightly overlapping to cover the bottom
Add a layer of the beef mixture spreading it evenly over the tortillas
Dollop sour cream over the meat layer and gently spread it out
Sprinkle a generous handful of shredded cheddar and mozzarella cheese
Repeat the layers of tortillas beef mixture sour cream and cheese until all ingredients are used finishing with a thick layer of cheese on top
Cover the dish tightly with aluminum foil and bake for 40 minutes
Remove the foil and bake for an additional 10 to 15 minutes until the cheese is golden and bubbly
Let the taco lasagna rest for 10 minutes before slicing to allow the layers to set
