Ingredients
For the Pie Crust
2 1/2 cups all-purpose flour
1 cup unsalted butter cold and cubed
6 to 8 tablespoons ice water
For the Strawberry Filling
2 cups fresh or frozen strawberries chopped
1/2 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
For Assembly
1 egg beaten for egg wash
Instructions
Step 1 Make the Pie Dough
In a large mixing bowl combine flour and cold cubed butter Use a pastry cutter or your fingers to break the butter into pea-sized pieces Gradually add ice water one tablespoon at a time until the dough comes together Divide the dough in half wrap each portion in plastic wrap and refrigerate for at least 30 minutes
Step 2 Prepare the Strawberry Filling
In a saucepan over medium heat combine strawberries sugar cornstarch and lemon juice Stir continuously and cook for 5 to 7 minutes until the mixture thickens Let the filling cool completely before using
Step 3 Roll Out and Cut the Dough
Lightly flour a work surface and roll out one portion of chilled dough until it is about 1/8 inch thick Use a heart-shaped cookie cutter to cut out as many pieces as possible Repeat with the second portion of dough Place half of the hearts on a parchment-lined baking sheet
Step 4 Assemble the Hand Pies
Spoon a small amount of cooled strawberry filling onto the center of each dough heart leaving space around the edges Brush the edges with a little water then place a second heart-shaped piece of dough on top Press the edges together with your fingers then crimp with a fork to seal
Step 5 Apply Egg Wash and Bake
Brush the tops of the pies with the beaten egg Use a knife to cut a small slit in the center of each pie to allow steam to escape Bake in a preheated oven at 375°F or 190°C for 18 to 22 minutes until golden brown Let the pies cool on a wire rack before serving
Notes
For best results keep the butter cold throughout the dough-making process
Avoid overfilling the pies to prevent leakage while baking
If your strawberries are extra juicy add a little more cornstarch to thicken the filling
For a vegan version replace butter with coconut oil and use a dairy-free milk wash instead of egg wash
