Description

Ingredients

Ground turkey 1 pound
Cooked rice 2 cups
Olive oil 1 tablespoon
Garlic minced 2 cloves
Onion diced 1 small
Bell pepper chopped 1 cup
Carrots diced 1/2 cup
Frozen peas 1/2 cup
Cream of mushroom soup 1 can 10.5 oz
Chicken broth 1/2 cup
Cheddar cheese shredded 1 cup
Salt to taste
Black pepper 1/2 teaspoon
Paprika 1/2 teaspoon


Instructions

Preheat oven to 375°F 190°C
Heat olive oil in a large skillet over medium heat
Add minced garlic and diced onion then sauté until softened
Add ground turkey and cook until browned breaking it apart with a spoon
Stir in chopped bell peppers carrots and frozen peas then cook for another 2 minutes
Pour in cream of mushroom soup chicken broth salt black pepper and paprika then mix well
Add the cooked rice and stir everything together until well combined
Transfer to a greased 9×13-inch baking dish and spread evenly
Sprinkle shredded cheddar cheese on top
Cover with foil and bake for 25 minutes then remove foil and bake for another 10 minutes until cheese is bubbly
Let sit for 5 minutes before serving

Notes

Use brown rice for a healthier option with more fiber
For a low-carb version swap rice for cauliflower rice
For extra creaminess stir in a spoonful of Greek yogurt or sour cream before baking
Store leftovers in an airtight container in the refrigerator for up to four days
