Ingredients
For the Pasta
12 ounces pasta (spaghetti, fettuccine, or rigatoni)
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup reserved pasta water
For the Sauce and Toppings
2 balls fresh Burrata cheese
1 1/2 cups cherry tomatoes, halved
1/4 cup fresh basil leaves
1/4 cup grated Parmesan cheese
Zest of 1 lemon
1 tablespoon lemon juice
1/4 teaspoon sea salt
Extra olive oil for drizzling
Instructions
Step One: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Step Two: Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).
Add the cherry tomatoes and cook until they soften and release their juices, about 3–5 minutes. Season with salt, black pepper, and lemon zest.
Step Three: Toss Everything Together
Add the cooked pasta to the skillet and toss to combine. Pour in a splash of the reserved pasta water to help create a light sauce.
Remove the pan from heat and stir in the lemon juice and grated Parmesan. Toss until the pasta is evenly coated.
Step Four: Add the Burrata and Serve
Transfer the pasta to serving bowls. Gently place a ball of Burrata on top of each portion.
Tear open the Burrata slightly to let the creamy center ooze out.
Garnish with fresh basil, a drizzle of olive oil, and a sprinkle of sea salt. Serve immediately.
Notes
Serving Tip: Let the Burrata come to room temperature before using to ensure a creamy melt-in-your-mouth texture.
Storage: This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently with a splash of olive oil.
Customization: Add grilled chicken, shrimp, or roasted vegetables for extra protein and flavor.
