Description

Ingredients

2 cups complete pancake mix
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips


Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter, brown sugar, and white sugar until fluffy.
Beat in the egg and vanilla extract until fully incorporated.
Gradually stir in the pancake mix until a soft dough forms.
Fold in the chocolate chips evenly throughout the dough.
Scoop tablespoon-sized portions onto the baking sheet, spacing 2 inches apart.
Bake for 10–12 minutes or until the edges are golden and centers are set.
Allow cookies to cool on the sheet for 2 minutes before transferring to a wire rack.

Notes

For best results, use “just add water” pancake mix. Chilling the dough for 20 minutes before baking results in thicker cookies. Substitute vegan butter and egg replacer for a dairy-free version.
