Description

A rich and comforting Hearty Chicken and Vegetable Stew packed with tender chicken, carrots, potatoes, and aromatic herbs for the perfect cozy meal.


Ingredients

2 lbs bone-in chicken thighs
1 large onion, chopped
4 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
1 cup celery, chopped
6 cups chicken broth
1 can diced tomatoes (optional)
1 tsp dried thyme
1 tsp rosemary
Salt and pepper to taste
2 tbsp olive oil


Instructions

Heat olive oil in a large pot over medium heat.
Brown the chicken on all sides and remove from the pot.
In the same pot, sauté onions, garlic, carrots, celery, and potatoes until softened.
Return the chicken to the pot, add chicken broth and diced tomatoes.
Season with thyme, rosemary, salt, and pepper.
Bring to a boil, then reduce heat and simmer uncovered for 45-60 minutes until chicken is cooked through and vegetables are tender.
Serve hot with crusty bread.

Notes

For added flavor, sear the chicken until golden before adding broth.
Swap chicken with turkey for a different twist.
Add green beans or kale in the last 10 minutes for extra color and nutrients.
