Serve it with a scoop of vanilla ice cream for the ultimate comfort dessert.

Ingredients

Scale

For the Cobbler Batter

1 cup all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup whole milk

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Pecan Topping

1 ½ cups pecans (halves or chopped)

¾ cup light or dark corn syrup

1 cup brown sugar (packed)

1 ½ cups hot water

Optional Add-Ons

½ teaspoon cinnamon for extra warmth

½ cup chocolate chips for a decadent twist

1 tablespoon bourbon for an adult-friendly version

Instructions

Step One: Prepare the Cobbler Batter

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Stir in the milk, melted butter, and vanilla extract until the batter is smooth.

Pour the batter into the prepared baking dish, spreading it evenly.

Step Two: Add the Pecan Layer

Sprinkle the pecans evenly over the batter.

In a medium bowl, mix the corn syrup, brown sugar, and hot water until well combined.

Gently pour the syrup mixture over the pecans and batter—do not stir.

Step Three: Bake the Cobbler

Place the baking dish in the oven and bake for 35-40 minutes, or until the top is golden brown and bubbling.

Remove from the oven and let it cool for 10-15 minutes to allow the filling to set.

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For a Crunchier Texture: Lightly toast the pecans before adding them to the batter.

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 20 seconds before serving.

Make It Ahead: This cobbler can be made a day in advance and reheated in the oven at 300°F (150°C) until warm.
