Ingredients
Coconut milk, chicken or vegetable broth, lemongrass, galangal, kaffir lime leaves, Thai red chilies, garlic, fish sauce, lime juice, brown sugar, chicken breast, shrimp or tofu, mushrooms, red bell peppers, cilantro, green onions
Instructions
In a large pot, heat a little oil over medium heat and sauté the garlic, lemongrass, and galangal until fragrant. Pour in the broth and bring to a gentle simmer. Add kaffir lime leaves and let the flavors infuse for ten minutes. Lower the heat and stir in the coconut milk. Add chicken, shrimp, or tofu and cook for five to seven minutes until tender. Stir in fish sauce, lime juice, and brown sugar. Remove lemongrass and kaffir lime leaves before serving. Garnish with fresh cilantro, green onions, and sliced red chilies.
Notes
For a vegetarian version, use tofu instead of chicken and swap fish sauce with soy sauce or coconut aminos. Adjust the spice level by adding more Thai red chilies or a dash of chili paste. Store leftovers in an airtight container for up to three days for best freshness.
