Ingredients
2 (16-ounce) cans refried beans
1 (8-ounce) package cream cheese, softened
1 cup sour cream
1 packet taco seasoning
2 cups shredded Mexican cheese blend, divided
1 (4-ounce) can diced green chilies (optional)
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup shredded cheddar cheese for topping
Chopped green onions or jalapeños for garnish (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish. In a large bowl, combine refried beans, softened cream cheese, sour cream, and taco seasoning, stirring until smooth. Mix in 1 cup of shredded Mexican cheese blend, diced green chilies, garlic powder, and onion powder. Spread the mixture evenly into the prepared baking dish, then top with the remaining 1 cup of Mexican cheese blend and cheddar cheese. Bake for 25 minutes, or until hot and bubbly. Garnish with chopped green onions or jalapeños and serve warm with tortilla chips.
Notes
For a spicier dip, add extra jalapeños, hot sauce, or a pinch of cayenne pepper. To make ahead, assemble the dip and store it in the fridge for up to 24 hours before baking. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated before serving.
