Taco Lasagna with Uncooked Ground Beef

Description

This Taco Lasagna recipe is the perfect fusion of bold Mexican flavors and classic Italian comfort. Layers of soft flour tortillas, seasoned uncooked ground beef, refried beans, salsa, and gooey cheese create a cheesy beefy and saucy masterpiece that is perfect for family dinners potlucks or meal prepping


Ingredients

1 lb 450g ground beef uncooked
6-8 medium-sized flour tortillas
2 tbsp taco seasoning
1 can 16 oz refried beans
1 cup salsa
2 cups shredded cheese Mexican blend or cheddar
1 can 14 oz diced tomatoes drained
½ cup sour cream
¼ cup chopped green onions
2 tbsp sliced jalapeños optional


Instructions

Preheat oven to 375°F 190°C and grease a baking dish
In a bowl mix uncooked ground beef with taco seasoning and ½ cup salsa until evenly combined
Spread a thin layer of salsa at the bottom of the baking dish
Place one flour tortilla over the salsa
Spread half of the refried beans evenly over the tortilla
Add a layer of the seasoned raw beef mixture and spread evenly
Sprinkle shredded cheese over the beef layer
Repeat layers with another tortilla beans beef cheese and salsa
For the final layer top with a tortilla remaining salsa and a generous amount of cheese
Cover with aluminum foil and bake for 30-35 minutes
Remove foil and bake for an additional 10 minutes until the cheese is golden and bubbly
Let it sit for 10 minutes before slicing and serving

Notes

To prevent sogginess drain canned tomatoes before using
If the cheese browns too quickly cover with foil until the last 10 minutes of baking
For extra spice add chopped jalapeños between layers or mix hot salsa into the beef
To make ahead assemble the lasagna and refrigerate it before baking
