Ingredients

For the Crust
All-butter pie crust (store-bought or homemade)

For the Filling
4 large eggs
1 cup heavy cream or ½ cup heavy cream and ½ cup whole milk
1 cup shredded cheese (Gruyère Swiss or cheddar)
½ teaspoon salt
¼ teaspoon white pepper
1 teaspoon Dijon mustard
½ cup chopped onions or leeks (optional)
½ cup sautéed mushrooms or spinach (optional)
½ cup cooked bacon ham or smoked salmon (optional)


Instructions

Preheat oven to 375°F (190°C) and prepare a 9-inch pie dish with the pie crust
Blind bake the crust by lining it with parchment paper and filling it with pie weights then bake for 10-12 minutes until lightly golden
Remove the weights and bake for another 5 minutes then set aside to cool slightly
In a bowl whisk together eggs heavy cream salt white pepper and Dijon mustard until smooth
Sprinkle half of the shredded cheese on the prebaked crust
Spread any cooked meats or vegetables evenly over the cheese layer
Pour the custard mixture over the ingredients ensuring an even distribution
Top with the remaining cheese
Place the quiche on a baking sheet and bake for 35-40 minutes or until the center is just set but slightly jiggly
Let the quiche rest for at least 10 minutes before slicing and serving

Notes

Quiche can be stored in the fridge for up to 4 days and frozen for up to 3 months
To reheat bake at 350°F (175°C) for 15-20 minutes or microwave in 30-second intervals
For a crustless version simply grease a pie dish and bake the filling without the crust
