Description
A cozy and comforting Pierogi Soup recipe made with potato pierogi, broth, onion, garlic, carrots, and a hint of cream for rich flavor.
Ingredients
1 tablespoon butter
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, diced
1 celery stalk, diced
6 cups chicken or vegetable broth
10–12 frozen potato and cheese pierogi
1 cup chopped cabbage (optional)
1/2 teaspoon dried thyme
Salt and pepper to taste
1/2 cup heavy cream (optional)
Fresh parsley, chopped (for garnish)
Crumbled bacon or shredded cheddar (optional for topping)
Instructions
In a large pot, melt butter over medium heat.
Add chopped onion and sauté until translucent, about 4 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in carrots and celery, cook for another 4–5 minutes until beginning to soften.
Pour in the broth, add thyme, cabbage (if using), salt, and pepper. Bring to a gentle boil.
Reduce heat and simmer for 10 minutes.
Add frozen pierogi and simmer gently for 8–10 minutes, or until fully cooked.
Stir in heavy cream if using, and heat through without boiling.
Ladle into bowls and garnish with parsley, bacon, or cheddar as desired.
Notes
Use veggie broth and omit bacon for a vegetarian version.
Don’t overboil the pierogi or they may break apart.
Swap in mushroom or meat-filled pierogi to change the flavor profile.
Soup thickens slightly as it sits add extra broth when reheating if needed.
