Description

A deliciously spicy and cheesy Armadillo Eggs Recipe featuring jalapeños stuffed with cream cheese, wrapped in sausage and crispy bacon. Perfect for BBQs, parties, and game nights, these smoky bites are a must-try for any food lover.


Ingredients

Jalapeños
Cream cheese
Shredded cheddar cheese
Breakfast sausage
Thick-cut bacon
Garlic powder

Instructions

Preheat the oven to 375°F or the smoker to 250°F
Wash and dry jalapeños then cut them in half lengthwise and remove seeds or leave them whole and hollow out the inside
In a bowl mix cream cheese shredded cheddar and garlic powder then stuff each jalapeño with the cheese mixture
Flatten a portion of breakfast sausage and wrap it completely around the stuffed jalapeño ensuring no gaps
Wrap a strip of bacon around the sausage-covered jalapeño securing it with a toothpick if necessary
Place on a wire rack over a baking sheet for oven cooking or directly on the smoker grill grates
Bake for 25–30 minutes in the oven broil for a few minutes for extra crispiness or smoke for 1.5–2 hours at 250°F then increase heat to 350°F for 10 minutes
For the air fryer preheat to 375°F and cook for 15–18 minutes flipping halfway
Let rest for 5 minutes before serving with your favorite dipping sauce

Notes

For a milder flavor remove all jalapeño seeds
For extra spice mix hot sauce into the cheese filling
Use turkey bacon for a leaner version
Brushing with BBQ sauce or honey glaze in the last few minutes enhances the smoky sweetness
