Ingredients

1 lb ground beef or turkey
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
2 cups uncooked elbow or rotini pasta
2 cups beef or chicken broth
1 cup salsa
1 cup canned corn
1 cup canned black beans
1 ½ cups shredded cheddar or Mexican cheese blend
Salt and pepper to taste
Optional: sour cream, green onions, avocado


Instructions

Preheat oven to 375°F (if using oven-safe skillet). Cook ground meat and onion in skillet until browned. Add garlic, then taco seasoning. Stir in pasta, broth, salsa, corn, and black beans. Bring to a simmer, cover, and cook until pasta is tender. Stir in 1 cup cheese, top with remaining cheese, and bake until bubbly and melted. Garnish and serve.

Notes

Make it vegetarian by skipping meat and doubling beans. Customize with spicy salsa, tortilla strips, or other toppings. Great for meal prep and leftovers!
