Description
A chewy and festive Melty Matcha Chocolate Snowflake Nougat made with egg whites, honey, almonds, cranberries, white chocolate, and matcha powder.
Ingredients
2 large egg whites
1 ½ cups sugar
½ cup honey
¼ cup glucose syrup or light corn syrup
1 cup white chocolate, melted
2 tbsp matcha powder
½ cup dark chocolate chunks
¾ cup roasted almonds
½ cup dried cranberries
Powdered sugar for dusting
Instructions
Line a square baking pan with parchment paper and dust with powdered sugar.
In a saucepan, combine sugar, honey, and glucose syrup. Heat to 250°F using a candy thermometer.
While the syrup heats, whip egg whites in a mixer until stiff peaks form.
Slowly stream the hot syrup into the whipped egg whites while whisking continuously.
When thickened, fold in melted white chocolate mixed with matcha powder.
Quickly stir in dark chocolate chunks, roasted almonds, and dried cranberries.
Spread the mixture evenly into the prepared pan with a greased spatula.
Dust the top with powdered sugar and let set at room temperature for 3 hours.
Slice into squares and serve.
Notes
Work quickly when folding in chocolate and nuts as the nougat sets fast. Always use a candy thermometer for accuracy. Replace cranberries with dried cherries or raisins if desired.
