A flavorful and convenient make-ahead ranch chicken freezer meal packed with red potatoes, broccoli, carrots, garlic, and zesty ranch seasoning.
Ingredients
1 ½ lbs boneless, skinless chicken breasts or thighs
2 cups red potatoes, chopped
1 ½ cups broccoli florets
1 cup carrots, peeled and sliced
2 tablespoons olive oil
1 packet ranch seasoning mix
2 cloves garlic, minced
Salt to taste
Black pepper to taste
Optional: shredded cheese, chopped parsley, lemon wedges
Instructions
Label your freezer bags with recipe name, date, and cooking instructions.
In a large mixing bowl, combine chicken, potatoes, broccoli, carrots, olive oil, ranch seasoning, minced garlic, salt, and pepper.
Divide the mixture evenly into freezer-safe bags or containers.
Seal tightly, pressing out all the air, and lay flat in the freezer.
Freeze for at least 4 hours or overnight.
To cook from frozen, place contents on a baking sheet and bake at 400°F for 45–55 minutes, or until chicken reaches 165°F and veggies are tender.
To cook thawed, bake at 400°F for 30–35 minutes.
Optional: Top with shredded cheese and return to oven for 5 minutes until melted.
Garnish with parsley or lemon wedges before serving.
