Description

Lemon Ginger Chicken Rice is a fresh, easy, and flavorful meal perfect for weeknights. This zesty chicken dish is served over fluffy rice and loaded with bright, bold flavor from real lemon and ginger.


Ingredients

2 boneless chicken breasts
2 tablespoons lemon juice
1 teaspoon lemon zest
1 tablespoon grated fresh ginger
1 garlic clove, minced
1 tablespoon olive oil
Salt and pepper to taste

1 cup jasmine or basmati rice
2 cups chicken broth or water
1 teaspoon olive oil or butter
Chopped green onions or parsley for garnish


Instructions

In a bowl, mix lemon juice, zest, ginger, garlic, olive oil, salt, and pepper. Add chicken, coat well, and marinate for 15–30 minutes.
Cook rice with broth or water and oil in a saucepan until tender, about 18 minutes.
Grill or pan-sear the chicken over medium heat for 6–7 minutes per side until golden and cooked through.
Let the chicken rest, then slice. Serve over warm rice and top with chopped herbs or sesame seeds.

Notes

Substitute thighs for juicier meat or brown rice for more fiber. Add steamed vegetables or pineapple salsa for variation. To meal prep, store rice and chicken separately and reheat when needed.
