Ingredients

For the Lemon Ginger Chicken:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
1 teaspoon lemon zest
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon honey
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon crushed red pepper flakes (optional)

½ cup pineapple, diced
½ cup mango, diced
¼ cup red bell pepper, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh cilantro, chopped
1 teaspoon jalapeño, finely diced (optional)
1 tablespoon lime juice
½ teaspoon honey
Pinch of salt


Instructions

In a bowl, whisk together olive oil, lemon juice, lemon zest, grated ginger, garlic, honey, salt, black pepper, and red pepper flakes. Add the chicken breasts, coat them evenly, and marinate for at least 15 minutes (or up to 2 hours for deeper flavor).

For the salsa, mix pineapple, mango, red bell pepper, red onion, cilantro, jalapeño (if using), lime juice, honey, and salt in a bowl. Stir well and refrigerate.

Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5-6 minutes per side, or until fully cooked (internal temperature of 165°F/75°C). Let the chicken rest for 5 minutes, then slice and serve topped with the fresh salsa.

Notes
