1 (5-ounce) can of tuna, drained
½ cup kimchi, finely chopped
2 tablespoons mayonnaise
1 teaspoon soy sauce or tamari (gluten-free option)
½ teaspoon sesame oil
½ teaspoon gochujang (optional, for extra spice)
¼ teaspoon black pepper
2 slices of bread (sourdough, whole wheat, or brioche)
1 tablespoon butter (for toasting, optional)
¼ cup shredded lettuce or baby spinach
2 slices of tomato
¼ small cucumber, thinly sliced
1 teaspoon sesame seeds (optional, for garnish)


Instructions

In a mixing bowl, combine tuna, kimchi, mayonnaise, soy sauce, sesame oil, gochujang (if using), and black pepper. Stir well until evenly mixed. If toasting the sandwich, spread butter on the bread slices and toast them on a skillet until golden brown. Spread the kimchi tuna mixture onto one slice of bread, then layer with lettuce, tomato, and cucumber slices. Sprinkle with sesame seeds, place the second slice of bread on top, and press gently. Slice in half and serve immediately.

Notes

For a spicier kick, add more gochujang or chili flakes. The tuna mixture can be prepared in advance and stored in the fridge for up to 3 days. Serve as a sandwich, in a wrap, or as an open-faced toast.
