Ingredients

Ground beef
Taco seasoning
Flour tortillas
Salsa
Sour cream
Shredded cheese
Black beans
Diced tomatoes


Instructions

Preheat oven to 375°F (190°C)
In a skillet, cook ground beef over medium heat until browned
Stir in taco seasoning with a splash of water and mix well
Add black beans and diced tomatoes then simmer for 5 minutes
In a baking dish, layer tortillas, taco meat, salsa, sour cream, and cheese
Repeat layers until all ingredients are used finishing with cheese on top
Cover with foil and bake for 25 minutes
Remove foil and bake for another 10 minutes until cheese is bubbly
Let sit for 5 minutes before serving

Notes

For a spicier version add jalapeños or cayenne pepper
To make it vegetarian replace beef with lentils or plant-based meat
