Ingredients
Boneless Beef Short Ribs 2 lbs
Olive Oil 2 tbsp
Onion chopped 1 large
Garlic minced 4 cloves
Tomato Paste 2 tbsp
Red Wine 1 cup
Beef Broth 2 cups
Fresh Rosemary 2 sprigs
Salt and Pepper to taste
Instructions
Trim excess fat from the boneless beef short ribs and pat them dry
Season the ribs generously with salt and pepper
Heat olive oil in a large Dutch oven or skillet over medium-high heat
Sear the ribs for about 3 to 4 minutes per side until browned then remove and set aside
Add chopped onion and garlic to the pot and sauté until softened
Stir in tomato paste and cook for 1 minute
Pour in red wine scraping up any browned bits from the bottom of the pot
Add beef broth and rosemary then return the ribs to the pot
Cover and simmer on low heat for 2.5 to 3 hours or until the ribs are fork-tender
Remove ribs and let rest for a few minutes before serving with the sauce
Notes
For extra flavor let the ribs marinate in olive oil garlic and herbs overnight
If using a slow cooker follow the same searing steps then cook on low for 6 to 8 hours
To thicken the sauce simmer uncovered for 10 minutes after removing the ribs
