4 boneless, skinless chicken breasts
1.5 pounds baby potatoes, halved
5 cloves garlic, minced
1 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley for garnish


Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss halved baby potatoes with 1 tablespoon olive oil, half the minced garlic, half the Parmesan, salt, and pepper.
Spread the seasoned potatoes on one side of the baking sheet.
In the same bowl, coat chicken breasts with remaining olive oil, minced garlic, thyme, paprika, salt, pepper, and Parmesan.
Arrange the chicken next to the potatoes on the baking sheet.
Bake for 35-40 minutes, flipping the potatoes halfway through, until chicken is cooked through and golden.
For extra crispiness, broil for 2-3 minutes at the end, watching carefully.
Garnish with freshly chopped parsley and serve hot.

Notes
