Ingredients
4 bone-in, skin-on chicken thighs
6 tablespoons unsalted butter, melted
6 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh chopped parsley and lemon wedges for garnish (optional)
Instructions
Preheat the oven to 400°F. Pat the chicken dry and place it in a cast iron skillet or baking dish. In a bowl, combine melted butter, minced garlic, olive oil, paprika, garlic powder, onion powder, thyme, oregano, red pepper flakes, salt, and pepper. Pour the garlic butter mixture over the chicken, rubbing it thoroughly all over and under the skin. Bake uncovered for 35 to 40 minutes, basting with pan juices halfway through. The chicken is ready when golden, crispy, and cooked to 165°F internally. Garnish with parsley and serve with lemon wedges.
