Ingredients
8 slices of brioche or thick white sandwich bread
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
1/3 cup strawberry preserves
2 large eggs
1/4 cup milk
1/2 tsp cinnamon (optional)
Butter or oil for frying
Powdered sugar for dusting
Instructions
In a mixing bowl, beat the cream cheese with powdered sugar and vanilla until smooth and creamy.
Spread the cheesecake filling on one side of four bread slices. Add a generous spoonful of strawberry preserves on top.
Close each with another slice of bread to form a sandwich.
In a shallow bowl, whisk the eggs, milk, and cinnamon together to create the egg wash.
Heat a frying pan over medium heat and add butter or oil.
Dip each sandwich in the egg wash, coating both sides, then place into the hot pan.
Cook each side for 2 to 3 minutes, or until golden brown and crispy.
Remove, slice as desired, and dust with powdered sugar. Serve immediately while warm.
Notes
You can substitute strawberry jam with raspberry or blueberry. For a twist, add sliced fresh strawberries inside the sandwich before frying. Air fryer and oven methods also work well for a lighter version.
