Ingredients
Sourdough or brioche bread slices
Unsalted butter
Dijon mustard
Gruyère cheese, grated
Ham (optional)
All-purpose flour
Whole milk
Nutmeg
Salt
Black pepper
Instructions
In a saucepan, melt 2 tablespoons of butter over medium heat.
Whisk in 2 tablespoons of flour and cook for 1–2 minutes until golden and smooth.
Gradually whisk in 1 cup of milk until béchamel thickens.
Season with salt, black pepper, and a pinch of nutmeg.
Lightly toast the bread slices.
Spread Dijon mustard on one side of each slice.
Layer with grated Gruyère, a slice of ham if using, and a spoonful of béchamel.
Top with another slice of bread and butter the outsides of the sandwich.
Grill in a skillet over medium heat until golden brown on both sides.
Place sandwiches on a baking sheet, top with more béchamel and cheese.
Broil for 2–3 minutes until bubbly and golden.
Serve hot.
Notes
Use Emmental or Swiss cheese if Gruyère is unavailable. For a vegetarian version, omit the ham. Lightly toasting the bread before assembling helps prevent sogginess.
