Easy Egg Onion Pasta

Description

Ingredients

200g pasta (spaghetti or your choice)

3 large eggs

1 large onion, thinly sliced

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced (optional)

Salt to taste

Freshly ground black pepper to taste

Fresh parsley for garnish (optional)


Instructions

Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of pasta water and then drain the rest

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they become golden brown and caramelized

In a bowl, whisk the eggs with grated Parmesan cheese, salt, and pepper until well combined

Add the cooked pasta to the skillet with onions. Toss well to combine

Remove the skillet from heat and quickly pour in the egg and cheese mixture. Stir vigorously to create a creamy sauce, adding reserved pasta water little by little to adjust the consistency

Season with more salt and pepper if needed

Garnish with fresh parsley and additional Parmesan cheese before serving

Notes

For extra flavor, add crispy bacon or sautéed mushrooms

To make it spicy, sprinkle red chili flakes while sautéing the onions

Ensure the skillet is off the heat before adding the eggs to prevent scrambling
