Description

These Easy Shrimp Wraps are fresh, flavorful, and perfect for quick lunches or light dinners. Juicy shrimp are seasoned to perfection and wrapped with crisp veggies and creamy sauces in soft tortillas. Ready in under 30 minutes, they’re a versatile meal for any occasion.


Ingredients

1 lb large shrimp (peeled and deveined)

4-6 medium flour tortillas

2 cups romaine lettuce (chopped)

1 cup cherry tomatoes (halved)

1 medium cucumber (sliced thin)

1 small red onion (thinly sliced)

1 ripe avocado (sliced)

3 tbsp mayonnaise

2 tbsp Greek yogurt (optional for extra creaminess)

1 lime (juiced)

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

½ tsp chili flakes (optional for spice)

Salt and pepper to taste


Instructions

Rinse the shrimp under cold water and pat dry. Remove the shells and devein if necessary

In a bowl, mix olive oil, lime juice, garlic powder, smoked paprika, chili flakes, salt, and pepper. Toss the shrimp in the marinade and let it sit for 10-15 minutes

Heat a non-stick skillet over medium heat. Add a drizzle of olive oil and cook the shrimp for 2-3 minutes per side until pink and opaque. Remove from heat

Warm the tortillas in a dry pan for 10-15 seconds on each side to make them pliable

Spread mayonnaise and Greek yogurt (if using) on each tortilla. Layer with lettuce, tomatoes, cucumbers, red onion, avocado slices, and cooked shrimp

Drizzle with additional lime juice if desired. Fold the sides inward and roll tightly. Slice in half if preferred

Notes

For a spicier kick, add extra chili flakes or drizzle with sriracha

Swap tortillas with large lettuce leaves for a low-carb option

Store leftovers by keeping shrimp, veggies, and sauces in separate containers for up to 3 days
