This Easy One-Pan Turmeric Chicken & Rice is a flavorful hearty and healthy meal made in just one pan With golden turmeric-infused chicken and perfectly cooked rice this dish is packed with warm spices and comforting flavors Perfect for busy weeknights meal prep or when you want a satisfying meal without extra dishes


Ingredients

For the Chicken:
Chicken thighs (bone-in, skin-on) – 4 pieces
Turmeric powder – 1 ½ teaspoons
Cumin powder – 1 teaspoon
Paprika – ½ teaspoon
Salt – To taste
Black pepper – To taste
Olive oil – 2 tablespoons

For the Rice:
Basmati rice – 1 cup
Onion (chopped) – 1 medium
Garlic (minced) – 3 cloves
Chicken broth – 2 cups


Instructions

In a bowl season the chicken thighs with turmeric cumin paprika salt and pepper Let marinate for at least 10 minutes

Heat olive oil in a large skillet over medium-high heat Sear the chicken skin-side down for 3 to 4 minutes until golden Flip and cook for another 2 minutes Remove and set aside

In the same pan sauté the chopped onion and minced garlic until soft and fragrant Stir in turmeric and cumin then add the rice and toast for 1 to 2 minutes

Nestle the chicken back into the pan on top of the rice Pour in the chicken broth and bring to a simmer Reduce heat to low cover and cook for 18 to 20 minutes

Turn off the heat and let the dish rest covered for 5 minutes Fluff the rice with a fork and serve warm

Notes

For extra flavor use homemade chicken broth instead of store-bought
If you prefer a crispy rice bottom let the dish cook uncovered for the last 2 minutes
For a spicier version add red pepper flakes or cayenne pepper
Swap basmati rice for brown rice but increase cooking time to 35 to 40 minutes
