Ingredients

1 pound lean ground beef (85% lean)

6 to 8 medium flour tortillas

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup sour cream

1 ½ cups salsa (mild or spicy)

1 packet taco seasoning mix or 2 tablespoons homemade taco seasoning

1 can black beans (15 oz, drained and rinsed)

1 cup corn (optional)

½ cup chopped green onions (optional)

Optional Toppings:

Diced tomatoes

Sliced jalapeños

Fresh cilantro

Olives

Avocado or guacamole


Instructions

Preheat your oven to 375°F (190°C)

In a large bowl, combine raw ground beef with taco seasoning and half of the salsa

Stir in black beans and corn until evenly mixed

Spread a thin layer of salsa at the bottom of a 9×13-inch baking dish

Layer two tortillas, overlapping slightly, to cover the bottom

Add a portion of the beef mixture, spread evenly

Add a layer of sour cream, spreading gently

Sprinkle a generous handful of cheddar and mozzarella cheese

Repeat the layers until all ingredients are used, ending with a cheese layer

Cover with foil and bake for 40 minutes

Remove foil and bake for an additional 10–15 minutes until the cheese is bubbly and golden

Let it rest for 10 minutes before slicing and serving

Notes

Use thick salsa to avoid soggy layers

Add extra taco seasoning if you prefer bolder flavors

This dish freezes well—assemble ahead and bake when needed
