Ingredients
6 large eggs
1/2 cup heavy cream
1/2 cup milk
4 oz smoked salmon, chopped
1/2 cup shredded Gruyère or Swiss cheese
2 tablespoons chopped fresh dill or 1 teaspoon dried dill
1/4 cup chopped green onions
1/4 teaspoon black pepper
1/8 teaspoon salt
Butter or oil for greasing
Instructions
Preheat oven to 350°F (175°C) and grease a 9-inch pie dish or quiche pan.
In a medium bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until smooth.
Stir in the smoked salmon, cheese, dill, and green onions until evenly combined.
Pour the mixture into the greased baking dish and smooth the top.
Bake for 35 minutes, or until the center is set and the top is slightly golden.
Let cool for 10 minutes before slicing and serving warm or at room temperature.
Notes
Use cold-smoked salmon for a delicate texture or hot-smoked for a heartier bite. Substitute dill with chives or tarragon for variation. Gruyère, Swiss, or goat cheese all work beautifully. Great served cold or hot and ideal for make-ahead brunches.
