Ingredients
200g dark chocolate (70% cocoa)
150g unsalted butter
4 large eggs
200g granulated sugar
100g all-purpose flour
30g cocoa powder
1 tsp vanilla extract
½ tsp salt
1 tsp baking powder
Optional: 50g chocolate chips
Instructions
Preheat the oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper.
In a saucepan over low heat, melt the dark chocolate and butter together until smooth, then let cool slightly.
In a large bowl, beat the eggs and granulated sugar until thick and pale.
Stir the melted chocolate mixture and vanilla extract into the beaten eggs and sugar.
Sift the flour, cocoa powder, baking powder, and salt into the wet mixture.
Gently fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30–35 minutes, until the edges are set but the center is slightly jiggly.
Let the cake cool completely on a wire rack before slicing and serving.
Notes
Use the highest quality chocolate you can find for the richest flavor. For a gluten-free version, substitute the all-purpose flour with a gluten-free blend. Add a tablespoon of espresso powder to deepen the chocolate flavor.
