Ingredients
Pasta macaroni penne or fettuccine 250g
Cheddar Cheese grated 1 ½ cups
Parmesan Cheese grated ½ cup
Milk whole 1 cup
Heavy Cream ½ cup
Butter 2 tbsp
All-Purpose Flour 1 tbsp
Garlic minced 1 tsp
Salt ½ tsp
Black Pepper ½ tsp
Mustard Powder optional ½ tsp
Instructions
Boil a large pot of salted water and cook the pasta until al dente then drain and set aside reserving ½ cup of pasta water
Melt butter in a pan over medium heat and add minced garlic sautéing for 30 seconds
Whisk in flour and cook for 1 minute to make a smooth roux
Slowly pour in milk and cream whisking continuously until the sauce thickens
Lower the heat and stir in grated cheddar and parmesan cheese until fully melted and smooth
Season with salt black pepper and mustard powder for extra depth of flavor
Add the cooked pasta to the cheese sauce tossing gently to coat evenly
If the sauce is too thick add reserved pasta water gradually until the desired consistency is reached
Let the pasta sit for 1 to 2 minutes before serving to allow the sauce to cling better
Notes
Always use freshly grated cheese for a smooth creamy sauce
Never add cheese over high heat to prevent it from turning grainy
If the pasta absorbs too much sauce add a splash of milk before serving
For extra creaminess stir in a small dollop of cream cheese before serving
