A rich and savory one-skillet dinner packed with garlic, parmesan, tender chicken, and golden potatoes for the ultimate comfort meal.
Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
3 garlic cloves, minced
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning
Salt, to taste
Black pepper, to taste
4 medium Yukon gold potatoes, diced
2 tablespoons olive oil
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
3/4 cup heavy cream
2 tablespoons butter
1 teaspoon garlic powder
Fresh parsley, chopped (for garnish)
Extra grated parmesan (optional, for garnish)
Instructions
In a bowl, mix olive oil, garlic, paprika, Italian seasoning, salt, and pepper, then add chicken and coat well. Let marinate for 15 minutes.
In a large skillet, heat olive oil over medium-high heat. Add diced potatoes, season with salt and pepper, and cook for 10–12 minutes until golden and tender. Remove and set aside.
In the same skillet, sear marinated chicken for 4–5 minutes on each side until fully cooked through. Remove and let rest, then slice.
Reduce heat to medium and add butter, garlic powder, cream, mozzarella, and parmesan to the skillet. Stir until melted and smooth.
Return cooked potatoes and sliced chicken to the skillet and toss to coat in the sauce. Simmer for 2–3 minutes until heated through.
Garnish with parsley and extra parmesan if desired. Serve warm.
Notes
For extra flavor, add red pepper flakes or swap heavy cream with whole milk for a lighter version. Avoid pre-shredded cheese for the best melt.
