Description
A creamy, garlicky one-skillet recipe inspired by Buffalo Wild Wings, loaded with chicken, parmesan, butter, cream, and crispy potatoes.
Ingredients
2 boneless skinless chicken breasts
4 medium Yukon gold potatoes, diced
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
3/4 cup heavy cream
2 tablespoons butter
Fresh parsley, chopped
Red pepper flakes (optional)
Instructions
In a small bowl, mix 1 tablespoon olive oil with garlic, garlic powder, paprika, salt, and pepper. Coat chicken and let marinate for 15 minutes.
Heat remaining tablespoon of olive oil in a skillet over medium heat. Add diced potatoes and cook for 10–12 minutes until golden and tender. Remove and set aside.
Add chicken to the same skillet and sear for 4–5 minutes per side until fully cooked. Remove from pan and slice.
Reduce heat and add butter, heavy cream, parmesan, and mozzarella to the skillet. Stir until a creamy sauce forms.
Return cooked potatoes and sliced chicken to the skillet and stir to coat everything in sauce. Let simmer 2–3 minutes.
Garnish with parsley and optional red pepper flakes. Serve warm.
Notes
Freshly grated cheese melts better than pre-shredded. You can substitute heavy cream with whole milk or a mix of milk and Greek yogurt. Swap potatoes with cauliflower for a low-carb option.
