1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs recommended)
12 oz pasta (penne, spaghetti, fusilli, or your choice)
2 cups fresh tomatoes (chopped) or 1 can (14 oz) crushed tomatoes
23 tbsp olive oil
34 cloves garlic, finely chopped
Salt and black pepper to taste
Fresh basil, chopped (optional, for garnish)

Optional Add-ins:
Grilled chicken, shrimp, or crispy pancetta for added protein
Red pepper flakes for a hint of spice
¼ cup grated Parmesan cheese for extra cheesiness


Instructions

Bring a large pot of salted water to a boil
Add the pasta and cook until al dente according to package instructions
Reserve 1 cup of pasta water, then drain the pasta and set aside
In a large skillet, heat olive oil over medium heat
Add chopped garlic and sauté until fragrant, about 1 minute
Stir in the fresh or canned tomatoes and cook for 5–7 minutes until softened
Season with salt and black pepper to taste
Reduce heat to low and add the Boursin cheese
Stir continuously until the cheese melts into a creamy sauce
Add the cooked pasta to the sauce and toss to coat evenly
If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached
Garnish with fresh basil and grated Parmesan if desired
Serve immediately and enjoy

Notes

For extra flavor, roast fresh tomatoes before adding them to the sauce
Adjust spice level by adding more or less red pepper flakes
Use gluten-free pasta if needed for dietary preferences
Store leftovers in an airtight container in the refrigerator for up to 3 days
