Ingredients

2 boneless, skinless chicken breasts

12 oz (340g) pasta such as penne, fettuccine, or rigatoni

1 package (5.2 oz) Boursin cheese Garlic & Fine Herbs flavor

1/2 cup heavy cream

2 cloves garlic minced

2 tbsp olive oil

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley for garnish optional


Instructions

1. Cook the Chicken

Season the chicken with salt, pepper, and a pinch of garlic powder

Heat olive oil in a large skillet over medium heat

Sear the chicken for 4-5 minutes on each side until golden brown and cooked through

Remove from the skillet and let it rest before slicing into strips

2. Prepare the Creamy Boursin Sauce

In the same skillet reduce heat to medium-low and add minced garlic sautéing until fragrant

Pour in chicken broth and heavy cream stirring to combine

Crumble in the Boursin cheese and stir until fully melted into a smooth creamy sauce

Let the sauce simmer for 2-3 minutes until slightly thickened

3. Cook the Pasta

Bring a large pot of salted water to a boil

Add the pasta and cook until al dente according to package instructions

Reserve 1/2 cup of pasta water then drain the pasta

4. Combine and Serve

Add the cooked pasta to the skillet with the Boursin sauce and toss to coat

Stir in the grated Parmesan cheese and add a splash of reserved pasta water if needed to adjust consistency

Add the sliced chicken back into the skillet and mix well

Garnish with fresh parsley and extra Parmesan before serving
