A fun and easy recipe featuring ground beef, tortillas, pickles, lettuce, and cheese that brings the classic Big Mac flavor into a delicious handheld taco form.
Ingredients
1 pound ground beef (80/20 blend)
Salt and pepper, to taste
8 small flour tortillas
1 cup shredded lettuce
1/2 cup diced pickles
1 cup shredded cheddar cheese
1/2 cup diced onions
1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons finely diced pickles
1 tablespoon mustard
1 teaspoon paprika
Instructions
In a bowl, mix mayonnaise, ketchup, mustard, diced pickles, and paprika to create the special sauce.
Form the ground beef into small meatballs about 2 ounces each.
Preheat a cast iron skillet over medium-high heat.
Place one tortilla onto the skillet and top immediately with a meatball.
Use a spatula to smash the meatball flat onto the tortilla.
Season with salt and pepper and cook for 2-3 minutes until browned and crispy underneath.
Flip and cook for another 1-2 minutes until beef is cooked through and tortilla is lightly browned.
Transfer to a plate and sprinkle immediately with shredded cheddar cheese.
Top with shredded lettuce, diced pickles, and diced onions.
Drizzle generously with the prepared special sauce.
Serve immediately and enjoy.
Notes
Use a metal spatula for best smashing results. Swap flour tortillas with low-carb tortillas for a lighter version. Pre-make the sauce and toppings to save time during cooking.
