Description
A bold and flavorful Authentic Jamaican Curry Chicken made with bone-in chicken, Jamaican curry powder, thyme, garlic, and Scotch bonnet for the ultimate Caribbean comfort meal.
Ingredients
2 lbs chicken (bone-in, skin-on)
1 tbsp Jamaican curry powder
1 tsp turmeric
1 small onion, diced
2 cloves garlic, minced
1 Scotch bonnet pepper, deseeded
2 sprigs fresh thyme
1 tsp all-purpose seasoning
1/2 tsp black pepper
Salt to taste
2 cups water or chicken broth
2 tbsp vegetable oil
1 small potato, peeled and diced (optional)
Instructions
Season the chicken with curry powder, turmeric, salt, black pepper, and all-purpose seasoning and let marinate for at least 30 minutes.
Heat vegetable oil in a large pot over medium heat, add 1 tsp curry powder, and let it bloom for 30 seconds.
Add seasoned chicken pieces and brown on all sides, about 5–7 minutes.
Stir in diced onions, minced garlic, and Scotch bonnet pepper and sauté until fragrant.
Add thyme, diced potatoes (if using), and pour in water or broth.
Cover and simmer on medium-low heat for 30–40 minutes, until chicken is tender.
Remove lid and allow sauce to reduce for an additional 5–10 minutes to thicken.
Serve hot over steamed rice, roti, or your favorite sides.
Notes
Use authentic Jamaican curry powder like Grace or Betapac for the best flavor.
Adjust the Scotch bonnet pepper based on your spice tolerance.
